Thank you gals for all the wonderful response for the birthday party menu...Do keep pinging me if you come across any other lovely game or a dish... There is still a week for the D- Date..
Today's Salad is wholesome meal by itself... H and I have decided to have a bowl of Salad atleast 2wice a week.. before dinner.. so that it will reduce our intake of rice n chapathi's .. Believe me.. It just works.. This week has been successful with 2 variety of salad... and they could be made in a jiffy :)
Preparation time : 15 min
|Cooked Black eye beans from Can||Handful|
|Green Pepper||1/2 nos chopped finely|
|Lettuce||2 Leaves chopped|
|Tomato||2 nos small in size chopped finely|
|Cucumber||1.5 inch chopped into small pieces|
|Carrot||1.5 inch chopped into small pieces|
For the Salad dressing
|Low fat stirred yogurt||1 Cup|
|Lemon Juice||1 Tblspn|
|Mint leaves||handful chopped finely|
|Garlic Pod||1 nos chopped finely|
|Black Pepper||1/2 Tsp|
- Mix all the vegetables and the bean in a bowl .
- For the salad dressing , mix the yogurt , lemon juice ,garlic , mint leaves ,salt and pepper and stir it well.
- Add it to the vegetables in the bowl and mix well. Put it in the fridge for 30 minutes and serve it cold .
- I have used cold low fat yogurt.So served it at once after I prepared.
