Baked Malai Kofta Curry
March 4, 2010 by Sandhya Hariharan

This Birthday celebration of my boyz was indeed very spl to me. So I did the entire meal by myself and wanted everything spl . Malai Kofta was my first novice attempt for the party and it did come out well. Along side malai kofta , made veg nargisi koftas also.
I had given an option to my guests to make their own mughalai dish by choosing the kofta's for the gravy.

Ingredients:
For Malai Kofta
| Paneer | :150 gm grated |
| Potato | : 3-4 Nos medium sized boiled and grated |
| Coriander leaves | : 1/2 cup finely chopped |
| Garlic pods | : 3 Nos chopped finely |
| Green chillies | :2 Nos chopped finely |
| Corn Flour | : 4 Tblspn |
| Salt | :To Taste |
| Bread Crumbs | :from 2-3 slices |
For Gravy
| Onion | :4 Nos |
| Big Tomato | : 6Nos |
| Bayleaf | : 2 Nos |
| Cardamon | : 3 Nos |
| Cloves | :5-6 Nos |
| Ginger | : 1" piece |
| Garlic Pods | : 4 |
| Green Chillies | : 3 Nos |
| Red Chilli Powder | : 1 tsp |
| Garam masala powder | : 1 tblspn |
| Coriander Powder | : 1 tsp |
| Turmeric Powder | : 1/2 tsp |
| Low fat Fresh Cream | : 1/2 Cup |
| Salt | : to taste |
| Sugar | :1 tsp |
| Butter | :50gm |
DIRECTIONS:
Making of the Malai Koftas:
- Make a mash by combining grated paneer , potatoes , green chillies ,chopped garlic ,coriander leaves , salt to taste & corn flour.
- Divide them in equal size balls .Roll each one of the kofta balls into the breadcrumbs and arrange them in plate. Repeat the procedure for the rest of the balls.
- Preheat the oven to 180 C . Arrange all the koftas on the baking sheet with few drops of light oil sprinkled generously all over. Bake until they turn slightly brown. Keep checking and turning them in regular intervals.
Making of the Gravy:
- Peel the onion and boil them in sufficient water for 10 minutes. Let it cool down and put it in a liquidiser along with ginger, garlic and green chillies and make a smooth paste.
- Make a tomato puree by blending all the tomatoes and keep them aside.
- Heat butter in a wok , drop in bay leaf , cloves & cardamon. Fry them for a minute and now add the onion paste with a pinch of salt. Saute them until they turn a bit light brown.
- Subsequently add the tomato puree , turmeric powder , red chilli powder , coriander powder ,garam masala, Salt to taste & sugar..Cook for another few minutes with lids closed in a low flame. Tomato puree normally tends to splutter out .Its best to cook with closed lids.
- Add 3/4th - 1 cup of water depending upon the required consistency of the gravy and cook for 5 more minutes.
- Stir in Cream and turn off gas .Keep the gravy aside .
Assembling :

In a Serving dish arrange the freshly prepared kofta's in the gravy just before serving . Sprinkle a bit of grated paneer , fresh cream and coriander leaves before serving.
Enjoy this rich delicacy the healthy way :).
Cheers
